I have been asked by many for our Lime soup
recipe so here you go for all the people out there that came to Lime had it, loved it and miss it!
Many know about our Lime challenge with regards to the weight loss, well this dish is part of my staple diet right now as it is filling and
nutritious and once you have made a batch of it lasts for quiet a while in the fridge so here you go pay attention.

You can put in whichever vegetables you like, our dish has
carrots,
zucchini, potatoes, cilantro and of course limes and chicken.

Depending on how many you are making this for you can work out the quantities, I used 2 packets of boneless chicken breast and cut into cubes.

This is the secret
recipe from our chef
Karen, so secret I can't read the damn thing!

Once the chicken is cubed you season it with salt and pepper and chicken bouillon

Chop up your
zucchini
Then your
carrotts
The your
potatoes
You part boil your veg all together

In another pan you mix the chicken with the cilantro and lime juice then add it all together to simmer away.

Serve with either white rice or like I did a wholemeal pitta bread to dip.

This is a great dish to have ready in the fridge to heat in the microwave for a speedy filling meal. I have had mine in the fridge a week now and it is still good to go. So cook away my friends and see the weight fall off you! Cheers and

Change of scenery this week and quality time spent with some very special friends made from my time at
BBay. They had never been to the mainland so we hooked up with a great guide that we use at Lime and off we went to explore some of it.

This is just the quirkiest thing, you have to bang with the gong and someone knows you are waiting and heads over in the wee boat to get you.

The kids are like how we going to get across, well I was thinking that actually having never been this way before.

Off we trek

This was the real treat of the day the chance to go horse riding in the most fantastic setting.

They were ready and waiting for us


The kids were sizing them up as were the horses of the wee ones.


Adults first then to see who would ride with who?


Wow look at this big girl on her own horse and looking very confident.


The little man looked to be going with daddy at first.



Then before you knew it he had a horse of his own and another confident rider.

Off they trot


Bye bye guys we will see you soon, hold on and return in one piece please!

Um now for Donna and I to go and chill at the great resort next door that we use, time for some sun and R and R.


Like this lovely lady needs any more sun, she certainly goes home with more colour then when she comes to Belize.

Saturday morning was 2 days away from our weekly weigh in and the morning after the bad night before as in pizza and red wine. Here we are we our heavenly smoothies which were yellow mangoes thanks to
Helda and wow they were fabulous.

I had been out a couple of days ago and bought a waffle maker after seeing a great
recipe in a weigh watchers magazine. Here we have some very healthy ones made from Buckwheat flour which were
ok but needed something saucy on them so Karen our fantastic cook has come up with fruit puree for next time.

Marley the wandering dog stops by most days to say hi and this particular one was very warm and he was tired out so stayed for a snooze!

What is this you ask? Robbie the winner of weeks one challenge came back from the food fundraiser in the park with a treat for me, I call is
sabotage and
quickly hid it in the freezer once he was gone!

However to get my own back I sneaked in some dairy milk chocolates for him to find later with his chicken, pay back!

Honestly I just took in the smell of this
decadent little number, Robbie however did try and shove this in my face so I tasted some of the sauce.

Breakfast time after our weigh in, JD lost another 2lbs and I was 1.5lbs this week which was
ok but now I am super focused so watch out for next week.

It's no yolk it's serious stuff so now no middle of the egg anymore on my plate but no giving up the baked beans!

How JD has lost weight this week I will never know after someone told him we have proper British sausages in Lime right now and he has to have them nearly every day. At least he only has them with HP sauce or Colman's mustard so could be worse.

This Friday was the launch of our buckets of beer and wings in
Lime which were coated in Sharon's (Canadian of course not me) secret sauce! Tommy didn't want to miss out and came super early to try them out and we got a big thumbs up.

Also new tonight was the waterfall which is a shot of
Jaegar and a shot of beer drunk at the same time, of course JD was happy to try this wee number out for us.

It can be a tiny bit messy but he made gallant attempts to perfect it.
Helda's turn to show everyone how it is done.

Look who's back in the fold and very happy to be as are we to have them both back, welcome home Jim and
Jamilla.
We all agree that Jim is looking a bit pale and needs to get out in the sun or we will be calling him Michael soon!

As you can see he had everyone in the bar in stitches

He was worn out after that little stint.

The wings were a hit and these boys made themselves drink extra beer to get some more of them.

8pm and time for the 50/50 which was drawn by our guest of honour tonight Jamilla.

Who won this week? Surely it is my turn as I have never won yet!

Look at that radiant smile you would think she had just pulled her own number but no it was?

Yep Mrs JD won again and the money was happily handed over to John who promptly put it into some of that naughty back stuff-yes Yaegar!

Time for some dancing lessons from the expert who is remarkably light on his feet.

Now he is worn out for the night but I bet he lost 2 more pounds, unlike some of us that went on to eat pizza after this! Another Friday came and went but the hangover remains, cheers for now.

What fish n chips me? Says the man who
lost 5lbs in week one "stop it absolutely not"! I have to say for those of you out there that follow this blog you may recall a bet I lost about the this shirt from Beth not fitting him. Well for sure as you can see it does now with room to move so there is no denying that this wee Scotsman is losing weight. He hasn't cut out
alcohol completely but reckons he has cut down, if you see him ask about the sneaky
exercise routine once the wife has gone to bed!

The rest of these happy campers did have fish n chips and loved them,
Flynt at the far end so much so that he took two orders to go for later. I had some last week
pre the weigh in a day after they were cooked and once zapped in the microwave they were still fine, possibly why I weighed in so much,
ummm no more for me for a while.

Look who is here all the way from Belmopan to hang out, possibly why it rained this morning as she tends to bring that from the jungle with her each time. Welcome back Karen my Jayne of the jungle friend, of course she had the lighter bite menu choice this evening which was?

Grilled fish n salad, same fish same venue different calories, roll on week two's weigh in as that cheeky Scot Robbie may have won the battle but this is now a war!

For those out there not needing to lose any weight then this is how their dinner looked, fresh fish in our own beer battered batter every Tuesday from 6pm Lime. Your choice, would you go for this version or the lighter one? Cheers for now have a great day from all of us here in sunny San Pedro, Belize.

Monday was the weigh in of the first week of the Lime challenge, it was a day early for this week as we want to have the results for the paper each week so from now weigh in is on Monday's.
First up was myself, Tracey and
Helda who all had mixed feelings on how we were going to do. As the saying goes the scale doesn't lie so to start the ball rolling we have these results!
I lost 3lbs which wasn't too bad seeing as I did slip with one night of alcohol and a couple of brownies. Tracey stepped up her
exercise regime and lost 6.5lbs and
Helda also cutting out the alcohol lost 5.5lbs but the overall winner of the week was a full bodied
Scotsman who lost a staggering 11.5lbs in one week!
He may have won the battle this week but there are many more weeks to go so lets see if he has stamina as well as willpower.
As a group we lost 52.5lbs in week one so a great start. I made the lime and chicken soup last night and will blog that shortly as it is a very healthy meal option cheers for now.

It was a sad day but one that was coming for a while and that was saying goodbye to Mr Forrest Jones for a few weeks while he packs up his home in San Fransisco. We gave him the honour of drawing the 50/50 for this week so here he goes!

It was Ruth and Chunky who
religiously come in and pay their 5
bz each and every week so well done guys the drinks are on you!

Another farewell today as my good friend
Racquel left for Chicago after a week that flew by, no worries she will be back in June for my birthday hopefully!

She took with her a virgin to the San Pedro who fell in love with it instantly while having her first
panty ripper which set the scene for the week. The diving wasn't great but the experience was so maybe see you in June also Tammy, take care and tell everyone in Chicago about us,

OPERATION MUTT HOUSE MAKEOVER
SAGA and the animals at fort dog need your help!
The condition of the accommodation has deteriorated so badly that the dogs are in danger of injury and diseases are being spread.
A programme of works has been prepared and we need lots of volunteers, each to give two hours of their time to do some simple painting and DIY tasks.
You can volunteer by either
1. phoning Robbie on 628 9946 or emailing jockonthetyne@hotmail.com
2. leaving your details with Ingrid at SAGA
3. leaving your details with Sharon at Lime.
If you are unable to come and work, you can still help by donating any left over paint or building materials or by becoming a Mutt House Makeover GOLDEN SPONSER by paying $35BZ for one of the 22 locks we urgently require.
Volunteers can work alone or in small groups or we can pair you up with others and work can be done at any time by arrangement with Robbie.
This is a chance to give some hands on help that doesn't involve cleaning up dog mess so call soon.
Don't forget that this is an extra problem that we can solve quickly and cheaply by all acting together, but SAGA and FOTHS do both need your usual support as well.
